South Carolina's Steve Spurrier has received a one-year contract extension and a raise that will pay the coach $4 million annually. The university board of trustees approved a $700,000 raise and the extension Thursday. The deal ties Spurrier to the school through 2018. If the 68-year-old coach decides to retire, the trustees voted for a contract clause that would make Spurrier a special assistant to university President Harris Pastides and athletic director Ray Tanne

I think Fulmer's last contract paid him about $2.5 million per year, which put him near the top of college football coaches at the time he signed it.
Fulmer also got paid $6 million not to coach football as his buyout.
Butch is getting about $3.1 million per year.

Until 20 years ago the coaching salaries were relatively modest. More than $100k inflation adjusted but on par with higher end academic salaries...& assistant jobs were downright tough ways to scratch out a living....& they had not shortage of applicants...so yeah if they only paid $100K a lot if guys would still want to do it.
A hundred thousand isn't what it used to be but I'd say arbitrarily anything over $500k is just a respect/competitive thing
