I got some all natural steaks for you that have no fat for ya... Pay more for lower grade. I will say grass feed has a different flavor

I do recommend aging it a little. Some of these ppl are clueless when they want a fresh cut steak. I know Tyler Florence dry ages for 28 days

Dry age is the absolute best food on earth. I have tried to do it and found it impossible to keep the humidity right.

Yep. You can put paper towels an weight on the steak for a few days in the fridge. It will lose like 10% of its weight. I saw Alton Brown do that..

I did too but forgot all about it.
For all the Paula Deen talk, Alton Brown is far and away the best chef (for teaching purposes anyway) on Food Network.
I have one of his books where he shows how to do Baby Back Ribs IN THE OVEN. Best ribs I've ever eaten by a light year.
